This Brazilian baccatum grows wide and lush in hot New Jersey summers, bearing pods the length of a young girl’s index finger (the literal meaning of its poetic name). This is one of the favorite hot peppers for molhos (table sauces) in the state of Bahia in northeastern Brazil. It has a clean, moderate heat, less overpowering than that of other popular Brazilian peppers like the tiny pimenta malagueta and the perfumed pimenta-de-cheiro. More flavorful green than ripe, this pimenta has an herbal and green flavor with an earthy, mushroomy undertone, all courtesy of monoterpenes.
